What is traditional Cold Brew?
Cold brew is a refreshing coffee that is brewed either by very slowly dripping or immersing coarsely ground coffee in ambient or cold water over a period of 15 to 24 hours. The end result is a refreshing and smooth coffee flavour.

What is Cold Brew on a De'Longhi machine?
For this recipe the brew pump pauses to allow the ambient water to gently drip through the through the freshly ground coffee. This simulates the traditional flavour for a delicious cold brew in under 5 minutes. Perfect on its own or mix with flavours/cocktails. Its not the same as traditional cold brew because its more convenient.

What is the Espresso Cool recipe on Maestro?
This is a brand new recipe that can only be made on the La Specialista Maestro with Cold Extraction. Using the dual wall (pressurised) basket combined with 9 bar pressure from the machine this recipe brews with ambient water to extract over a cube of ice and deliver a cold-extracted espresso. The resulting flavour is a creamy and smooth espresso cool.

What water shall I use for cold brew?
For all drinks, only use fresh potable water. Before preparing a cold brew drink, empty out the water tank, rinse thoroughly and refill with fresh drinking water.

Iced coffee is traditionally a hot espresso brewed at 92℃-96°C and rapidly chilled over ice with the option of cold flat milk poured on top. The flavour can become somewhat diluted from the ice melting too fast.

What is De’Longhi Iced Coffee?
De’Longhi iced coffee is brewed at a lower temperature of 75°C reducing dilution of the coffee from the melting ice. Combined with our Latte Crema Cool system you can create thick creamy milk foam at the lower temp of 20°C. The result is an Iced Cappuccino or Latte that is naturally sweet and creamy. Don’t forget you can create this with plant based milks too.
